The amount of antioxidants in Ofada rice is 20-30 times more than that in polished white rice. Antioxidants neutralize the effects of free radicals on the body. free radicals are unstable molecules produced by the body during metabolism that can cause healthy body cells to mutate.
It does this because of the presence of soluble fiber. Soluble fibers swell up upon contact with water and forms a viscous gel. This slows down the passage of food along the alimentary canal and gives the body ample time so that the nutrients from food is properly absorbed. It slows down the release of glucose into the blood.
